HACCP Cooler: What it must truly guarantee
There is no universal “HACCP cooler” that would make transport compliant on its own. The right equipment is one that allows control of the hazard identified in your FSMS: contamination, temperature breach, product mixing, or excessive transport duration.
An insulated cooler slows down heat exchange but does not produce cold. For refrigerated products, cold accumulators or another device may be necessary. For hot items, use a separate container capable of limiting temperature drop.
Foodstuffs must be properly packaged before departure. Pre-cooling a box, limiting openings, and organizing the route are useful good practices, but they do not replace temperature verification when the risk justifies it.
